  • 1/2 cup cucumbers thinly sliced
  • 1/2 cup bell peppers julienned, any color
  • 2 tablespoons fresh herbs chopped parsley and cilantro
  • 1 tablespoon olive oil extra virgin preferred
  • 1 tablespoon lemon juice freshly squeezed

Method
 

  1. Wash and prepare your vegetables: halve the cherry tomatoes, thinly slice the cucumbers, and julienne the bell peppers. Set aside.
