  • 1 cup sliced cremini or baby bella mushrooms cleaned and sliced
  • 3 large eggs fresh and at room temperature
  • 1 tbsp butter or neutral oil
  • 1 clove garlic minced (optional)
  • 1 tbsp fresh herbs chopped parsley or thyme, optional
  • to taste salt and freshly cracked black pepper for seasoning
  • 1/4 cup grated cheese parmesan or gruyère, optional

Method
 

  1. Heat your skillet over medium heat and add a tablespoon of butter or oil, waiting until it shimmers and begins to crackle gently.
  2. Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they turn golden brown and release their earthy aroma, about 5-7 minutes.
  3. If using garlic, add the minced clove now and cook for about 30 seconds until fragrant, stirring constantly.
  4. Push the mushrooms to one side of the skillet and crack the eggs into a small bowl; beat lightly with salt and pepper.
  5. Pour the beaten eggs into the empty side of the skillet, allowing them to spread out gently and start to set at the edges.
  6. Let the eggs cook undisturbed for about 30 seconds, then softly fold or scramble them together with the mushrooms, keeping the heat moderate to avoid browning.
  7. Cook for another 2-3 minutes until the eggs are just set but still moist and glossy, and the mushrooms are deeply golden.
  8. Sprinkle with grated cheese and chopped herbs if using, then remove from heat and let sit for a minute to meld flavors.
  9. Serve hot directly from the skillet or carefully slide onto a plate, enjoying the silky eggs and savory mushrooms with your favorite bread or side.
