Halloween Monster Eyeball Cake Pops

These cake pops are small, handheld desserts designed to resemble creepy eyeballs, with colorful, gooey centers and detailed bloodshot veins. They are made by forming cake and frosting into spheres, coating them with candy melts, and adding edible features to create a spooky, fun appearance with a crisp exterior and moist interior.

Ingredients

  • 1 box store-bought cake (or homemade cake) preferably chocolate or vanilla
  • 1/2 cup sweet frosting preferably buttercream
  • 12 pieces lollipop sticks
  • keeper chilled candy melts or melting chocolates red, bloodshot veins, and optional black for pupils
  • as needed edible food coloring gels or gels multiple colors for veins and pupils
  • optional sprinkles, edible glitter, or additional decorations

Equipment

  • Mixing bowls
  • Lollipop sticks
  • Microwave-safe bowl or double boiler
  • Cutting board
  • Sharp knife
  • Wax paper or stand for drying
  • Small piping bag or squeeze bottle

Method

  1. Crumble the cake into a large mixing bowl until it resembles coarse crumbs. Mix in the sweet frosting until the mixture is soft and moldable.
  2. Using your hands, shape the mixture into 12 uniform balls, about the size of a walnut, and insert a lollipop stick into each, pressing firmly so they stay secure. Place the shaped cake pops on a tray lined with wax paper and freeze for at least 30 minutes to firm up.
  3. Once chilled, melt the candy melts in a microwave-safe bowl or double boiler, stirring until completely smooth and glossy.
  4. Dip each cake pop into the melted candy melts, twisting gently to remove excess coating. Place them back on the wax paper to set and harden, then repeat the dipping process for a smooth, even shell.
  5. Once the coating is set, use edible food coloring gels to draw bloodshot veins on the eyeballs, adding red lines that radiate outward. Use a black gel to add small pupils in the center to complete the eye look.
  6. If desired, add small decorative elements like tiny blood splatters, extra veins, or glitter to give a more gory or festive effect.

Notes

Chilling the cake pops before dipping helps achieve a smooth, crack-free coating. Take your time decorating to get that creepy, bloodshot effect. Handle with care to prevent smudging the delicate details.
