  • 170 g granulated sugar or coconut sugar for caramel flavor
  • 2 eggs room temperature
  • 60 g cocoa powder Dutch-processed
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 175°C (350°F). Line your baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine the melted butter and sugar. Stir with a rubber spatula until the mixture is glossy and well blended, and the sugar starts to dissolve with a faint shine.
  3. Add in the eggs one at a time, whisking gently after each addition until fully incorporated. The batter should become smooth and slightly thickened.
  4. Sift the cocoa powder into the bowl and add vanilla extract and a pinch of salt. Fold everything together gently, until the batter is dark, smooth, and uniform in color.
  5. Pour the batter into the prepared pan, spreading it evenly with the spatula to fill the corners. The batter should be thick and velvety.
  6. Bake in the oven for 20 to 25 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs. The top should be slightly shiny and firm to the touch.
  7. Remove the pan from the oven and let the brownies cool in the pan for about 15 minutes. Then, lift them out using the parchment overhang and transfer to a wire rack to cool completely.
  8. Cut the cooled brownies into squares. Decorate with spooky icing, edible eyes, gummy worms, or other Halloween-themed candies to create creepy scenes.
