  • 1 each bell peppers preferably different colors, chopped

  • 1/3 cup crispy chickpeas roasted until golden
  • 4 small pickles briny and tangy, sliced
  • 1 tablespoon extra virgin olive oil for drizzling

Method
 

  1. Slice the chicken breasts into evenly thick strips or bite-sized pieces and pat them dry with paper towels.
  2. In a medium bowl, toss the chicken with olive oil, smoked paprika, garlic powder, salt, and pepper. Let it marinate for about 10 minutes while you prepare the vegetables.
  3. Preheat your grill or skillet over medium-high heat until hot and slightly shimmering. Place the chicken pieces in a single layer and cook for 4-5 minutes per side, until golden brown and cooked through with an internal temperature of 75°C (165°F).
  4. While the chicken cooks, chop the bell peppers into crunchy, bite-sized pieces. Slice the pickles thinly for a tangy, briny contrast. Keep the veggies ready for assembly.
  5. Once cooked, transfer the chicken to a plate and let it rest for 5 minutes to retain its juiciness. Meanwhile, chop your fresh herbs finely to add a burst of aromatic freshness.
