Method
 

  1. Preheat the skillet over medium heat until it feels warm to the touch, with a gentle sizzle when tested.
  2. Slice each piece of low-carb bread about 1cm thick and place them in the skillet. Toast for about 2 minutes on each side until golden brown and crispy, listening for a gentle crunch and watching for a beautiful golden hue.
  3. While the bread toasts, scoop the cottage cheese into a small bowl. Add a squeeze of lemon juice, a pinch of salt, and black pepper. Mix well with a spoon until the mixture is smooth and slightly tangy, releasing a fresh aroma.
  4. Once the toast is golden and crispy, remove it from the skillet and place on a plate. While still warm, spread a generous layer of the cottage cheese mixture onto each slice, allowing it to melt slightly into the surface and create a creamy contrast with the crisp edges.
